Hatzot Express Modiin – Bringing a Jerusalem Legend Beyond the City

This project involved the design of the first Hatzot Express branch, marking the expansion of the iconic Jerusalem restaurant beyond its original home for the first time. After years of exploring opportunities across Israel, the owners selected Modiin as the location for their first express-format branch, introducing the Hatzot experience to a new audience while preserving the identity and heritage that made the restaurant a culinary landmark.

The design concept was inspired by the origins of the brand in Jerusalem's Mahane Yehuda Market and the building where Hatzot was originally established in 1970. The goal was to create the feeling of a Jerusalem street or courtyard, capturing the authentic atmosphere and character associated with the restaurant's history.

A key element of the project was reinterpreting the famous "Hatzot Window" – the service window from which the original Jerusalem mixed grill was first sold decades ago. This iconic feature became part of the design language, creating a direct connection between the restaurant's heritage and its contemporary customer experience.

At the same time, it was important for the new branch to feel modern, welcoming, and efficient. The design balances authentic Jerusalem influences with a contemporary fast-casual dining environment, allowing the story of the brand to be communicated in a clear and memorable way.

The result is a restaurant that successfully preserves the DNA of Hatzot while adapting it to a new express concept, creating a foundation for the future growth and expansion of the brand.
